The smell of terroir

A new SISSA study reveals our olfactory discrimination abilities

Our nose abilities are greater than we expected. In fact, our olfactory system allows us to distinguish two wines differing for grape variety and, even, for production geographical area, a feature defined terroir by experts. This is the evidence emerged from a new research, published in the journal Food quality and preference, carried out at SISSA by Francesco Foroni, now at the Australian Catholic University, together with other scientists led by SISSA neuroscientist Raffaella Rumiati and the collaboration of the University of Padua.

Con il solo olfatto si possono distinguere due vini diversi per varietà di uva e, persino, per zona geografica di produzione, una caratteristica definita dagli esperti terroir. A provarlo è una nuova ricerca, appena pubblicata sulla rivista “Food Quality and Preference”, condotta alla Sissa di Trieste dal ricercatore Francesco Foroni, ora al lavoro presso l’Australian Catholic University, assieme a un’equipe di studiosi guidati dalla neuroscienziata della Sissa Raffaella Rumiati. Allo studio ha collaborato anche l’Università di Padova.
